The Lemon Pie Squares, the base of this is raisin and pecans, lightly toasted, so that it's really a flavorful base. It’s always a party with these two and I’m fortunate to have had the opportunity to be with them in person just a few weeks ago when we were all together at the Esselstyn Family Farm. She brings her passion, energy, and can-do attitude to her presentations, cooking demonstrations, and cookbooks.
If it's little cucumbers or blueberries or Mandarin oranges or toasted pepitas or whatever it is, a zest of some sort, that adds so much to a salad. She and her daughter, Jane, have become fierce, energetic, big-spirited advocates for a plant-based lifestyle. When it comes to plant-based eating, we are three generations strong, due to Ann’s love and delicious persistence.Anything that says that it reminds a vegan of macaroni and cheese is not going to taste like macaroni and cheese. It also includes big-flavored dinners—such as Sweet Potato and Cashew Ricotta Lasagna and Plant-Based Pad Thai—sure to tempt even the most vegetable-averse eaters. So at night we would be sitting there watching TV, maybe 8:00 or 9:00 and the door would rattle and I would begin to salivate.
This is such an amazing cookbook that I just can't bring myself to dock a star, like I was planning to, for the cheesy title. After watching the documentary 'What the Health' I decided to join the plant-based movement for a while and this cookbook provides the perfect foundation. They went through to make sure that the recipes in here that are compliant with our heart disease guidelines are labeled as heart disease-friendly recipes.I don't think a Macintosh would be the best, necessarily, but I think something with a little crispness to it.
